Definition of EVOO:

The term EVOO means Extra Virgin Olive Oil, is the abbreviation used by olive farmers, tasters and people in the oil sector to refer to the authentic olive juice.

But within the category Extra Virgin Olive Oil there are large differences not classified in any regulation, such as: early harvest oils with very different aromas, coupages of varieties unique in the world, exquisite care in the harvesting and processing, among others differences that make an EVOO be called high-end, gourmet or premium.
