We talked about: <\/span><\/p>\n<ul>\n<li data-start=\"1066\" data-end=\"1108\"><span style=\"color: #000000;\">What it means to be a <strong data-start=\"1087\" data-end=\"1103\">Premium EVOO<\/strong> today.<\/span><\/li>\n<li data-start=\"1111\" data-end=\"1186\"><span style=\"color: #000000;\">The importance of origin, agronomic control and early harvesting.<\/span><\/li>\n<li data-start=\"1189\" data-end=\"1294\"><span style=\"color: #000000;\">How to communicate and promote an extra virgin olive oil in national and international markets.<\/span><\/li>\n<\/ul>\n<h2 data-start=\"1296\" data-end=\"1356\"><\/h2>\n<h2 data-start=\"1296\" data-end=\"1356\"><span style=\"color: #000000;\">Tasting of the season: first sensations of the 25\/26 vintage<\/span><\/h2>\n<p data-start=\"1358\" data-end=\"1724\"><span style=\"color: #000000;\">The meeting was also the perfect opportunity to <strong data-start=\"1408\" data-end=\"1484\">taste the first oils produced during the new 2025\/26 campaign.<\/strong> We were able to verify, together with students and experts, that the effort in the field is resulting in EVOOs of <strong data-start=\"1597\" data-end=\"1623\">extraordinary quality<\/strong>: fresh, balanced profiles with an aromatic intensity marked by green and healthy olives. <\/span><\/p>\n<h2 data-start=\"1726\" data-end=\"1772\"><span style=\"color: #000000;\">Training, dissemination and oil culture<\/span><\/h2>\n<p data-start=\"1774\" data-end=\"2046\"><span style=\"color: #000000;\">Events like this reinforce our conviction that the future of the sector is based on <strong data-start=\"1861\" data-end=\"1888\">shared knowledge<\/strong>, professionalization and <strong data-start=\"1917\" data-end=\"1955\">commitment to the end consumer<\/strong>, who increasingly values traceability, quality and the story behind each bottle.<\/span><\/p>\n<p data-start=\"2048\" data-end=\"2252\"><span style=\"color: #000000;\">We thank ESAO for the invitation and for its work in the training of tasters, producers and distributors who work every day to dignify and elevate the world of <strong data-start=\"2219\" data-end=\"2251\">extra virgin olive oil<\/strong>.<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>During the month of November, we had the honor of participating as speakers in the prestigious course of the ESAO (Escuela Superior del Aceite de Oliva), one of the most recognized institutions in the training of professionals in the olive oil sector.
