Last <strong data-start=\"613\" data-end=\"690\">Monday we lived a very special day in our farms in Relleu (Alicante)<\/strong> with the celebration of our awaited <strong data-start=\"730\" data-end=\"748\">Momento Envero<\/strong>, the magical moment when the olive begins its transformation from green to purple. <\/span><\/p>\n<h2 data-start=\"840\" data-end=\"869\"><span style=\"color: #000000;\">What is the Envero Moment?<\/span><\/h2>\n<p data-start=\"871\" data-end=\"1237\"><span style=\"color: #000000;\"><strong data-start=\"874\" data-end=\"884\">Veraison<\/strong> marks the turning point in olive ripening. This moment is key for the <g id=\"gid_1\">production of early harvest extra virgin olive oils<\/g>, rich in polyphenols, fresh aromas and an extraordinary sensory profile. Through guided tours through our centenary olive groves, commented tastings of AOVEs and immersive activities, we shared the soul of our family project.
